The color is pale peach. Tangerine and lime flowers waft off the nose. Those same flavors echo on the palate, followed by creamsicle and shortbread, finishing again on lime. There is surprising weight here given the mouthwatering acidity.
This beautiful all-season rosé pairs wonderfully with rich, cheeses, and garlicky white pizzas.
Tech Stuff:
Vineyards: Crazy, this wine is actually a single vineyard selection off their St. Dolores Estate on Parrett Mtn, in the Chehalem Mtns. AVA. The grapes hail from three blocks of our certified organic, high-elevation (1,000 feet!), acid-preserving vineyard at the winery.
Barrel-fermented with a long, slow, low-temperature, wild-yeast process and aged in older French oak.
Aged using lees addition and incorporating Champagne methodologies from 100 years ago to strip color and broaden an earthy mid-palate, similar to a rosé Champagne from that era, without the bubbles.
