100% Malbec (aka Auxerrois locally). The fruit for the entry-level Pur comes from seven different Combel sites totalling 8.5 hectares around their home village of Cournou, which lies on the Causse Calcaire, a limestone plateau in Cahors at 320-350 meters in elevation. Planted on clay-limestone soils, the vines are certified-organic (in conversion to biodynamic farming), average 30 years old and are kept to a modest 40 hl/ha yield. The bunches are hand-harvested and mainly destemmed but with up to 20% directly pressed as whole clusters; the juice ferments at cool temperatures with indigenous yeasts in cement and steel tanks with around two week of maceration. The wine is aged on its lees in cement through the winter and bottled unfiltered in the spring. Sulfur throughout vinification and aging is minimal.

Cahors is a historic French wine appellation located in South West France, situated along the meandering Lot River roughly 100 miles east of Bordeaux. Celebrated as the true spiritual birthplace of Malbec, the region has a winemaking history dating back to Roman times. Long before Bordeaux gained global prominence, the deeply colored, powerful reds of Cahors were exported across Europe and famously nicknamed "the Black Wine".Established as an Appellation d’Origine Contrôlée (AOC) in 1971, Cahors enforces strict regulations to protect its historical identity:
The Red Only Rule: The AOC designation applies strictly to red wines. Any white or rosé wines made in the geographic area must be labeled as Indication Géographique Protégée (IGP) Vin de Pays du Lot.
The Malbec Mandate: Every bottle of AOC Cahors must contain at least 70% Malbec. Locally, the grape is referred to as Côt or Auxerrois.
Blending Partners: The remaining 30% of a blend can include Merlot (to add roundness and softness) and/or Tannat (to add further structural tannins and color). However, many modern producers opt to make 100% single-varietal Malbec.
